Tofu Scramble Recipe


This is our kind of hearty style breakfast!


350g extra firm tofu

1 punnet mushrooms, sliced

1 large onion, chopped

1 garlic clove, minced

2 teaspoons olive oil

1 avocado

A few cherry tomatoes

4 slices of whole wheat or sourdough bread

A bunch of fresh coriander

¼ teaspoon ground turmeric

¼ teaspoon paprika

Drizzle of lime or lemon

Salt & pepper



Squeeze out all excess liquid from the tofu using a kitchen towel. Sauté the onion, garlic and sliced mushrooms in a frying pan with the olive oil on medium heat. Add the tofu by scrambling it with your hands, together with the turmeric, paprika, salt and pepper.

Toast the bread until golden brown and crispy. Slice the avo and cut the cherry tomatoes in half.

To serve, stack up the toast with the scrambled tofu and mushrooms and sprinkle with fresh coriander and cherry tomatoes. Place avocado slices on the side, drizzle with lime juice, then add salt and pepper to taste.
